Sourdough Bread with Nigella, White Sesame & Fennel Seeds



I bake bread once a week when I do 'starter' maintenance and this one was sprinkled with nigella seeds, white sesame seeds and fennel. I toasted everything separately prior to sprinkling the dampened loaf with the three types of seeds. I did this right before my loaf went into the oven.

The basic sourdough bread recipe I use is here. I, however used brown sugar instead of white sugar this time*, and put a casserole dish of boiling water in the oven for the first 15 minutes and then removed it. I baked the bread for a total of 50 minutes.

Looks nice doesn't it? The combination of the 3 types of seeds worked beautifully and I'd definitely make this again!

*I've been using honey as it imparts a more complex flavor to the bread than refined white sugar and this time I tried using brown sugar which works beautifully.

That looks awesome! And you're so diligent baking bread once a week. I've made bread just once in my life.. I also used honey instead of white sugar.

It looks gorgeous! I am totally in love with nigella seeds. Have you tried that salty cheese that is stringy and knotted like a rope, flecked with nigella? I am addicted. I think it might be Middle Eastern.

Never try Nigella seed before. Wonder can find it here. Beautiful bread :)

Hi MS, I love home made bread... only I lack stamina to knead it well and so have only done it a couple of times. I measured the ingredients ...& hubs did the elbow grease part of it. But really, it seems so difficult... although you make it look so easy and GOOD ! You have inspired me to give it a try once more...

I love the flavor that nigella seeds impart. Kind of oniony. This bread looks delicious. I did a ciabatta with nigella and other seeds and it was really tastey.
