Yogurt Pancakes


I've been seriously slacking off on writing posts in my blog and I'm going to blame the hot weather as well as the fact that I'm in the middle of renewing my residency permit right now. I guess I've just been too worn out from the heat and stressed out to be inspired to cook.

Here's a very simple pancake recipe. It's based on a recipe for old fashioned pancakes which was scribbled on a cooking card belonging to Dakota Kelly's grandmother, and I've modified it a bit and used yogurt in it.

Yogurt Pancakes

Serves 2-3

1 1/2 Cups Flour

3 1/2 Tsp Baking Powder

1 Tsp Salt

1 Tbsp Sugar

1 Cup Milk

1/2 Cup Yogurt

1 Egg

2 Tbsp Butter (Melted)

Step 1: Sift the dry ingredients into a bowl and make a well in the center. Add the rest of the ingredients and mix well.

Step 2: Use a ladle to make the pancakes on a hot griddle.

Step 3: Enjoy!

Note: If the batter seems dry add milk or yogurt to desired consistency.

I love the idea of yogurt flavored pancakes! I love anything yogurt and I might do this later in the week!

Yes, recently I also tried using yogurt in my muffins. The texture is very soft even after three days.

I agree with Elra--what a great idea. I make yoghurt cakes. But this one is even better given that I adore pancakes. I have this pancake mix--do you think if i factored in an yoghurt component, that would work?

Johnny: Yes, just use yogurt to moisturize the batter. So if you normally use milk, just use less milk and throw in the yogurt. :)

I can understand slacking off in blogging when it's hot and you have things to do. Posting takes a lot of time and effort.

The pancakes look wonderful! I like that you used yogurt. The pancakes must have been nice and tender.

Yogurt is great in anything...yep...we have all said it. These look great! Hey, don't worry about 'slacking off' as you say. Writing every day is quite a chore and blogging should be about sharing from a happy place...gosh that sounds silly...grin! But it should be fun...not cause ya feel obliged to. I was beginning to worry though...that everything was alright. Hope your applications are going fine...and that the heat 'turns off' real soon! Here it is certainly getting colder...yay!

I only ever make buttermilk pancakes, so even though this is simple, it's a new idea to me! Hope your residence permit thing goes easily - at least in Germany, the whole process is quite a pain :-(
